Summertime has got us feeling hot hot hot. To beat the heat we mixed up an easy watermelon-mint agua fresca. The recipe us based on the refreshing beverage often served alongside the menu del dia, or daily lunch special, in restaurants in Mexico.
WATERMELON MINT AGUA FRESCA
WHAT YOU’LL NEED (makes 4)
1/2 small seedless watermelon
2 fresh limes
fresh mint sprigs
1 cup water
HOW TO MAKE IT:
Scoop the flesh from the watermelon with a large spoon and add to the blender along with a cup of water. Add the juice of one lime and mint leaves to taste. Blend.
In each glass, muddle a quarter of a lime and fresh mint leaves and then add ice. Pour the liquid through a strainer over the ice. Garnish with a lime wedge on the rim and another sprig of fresh mint. Enjoy!
For a chilly treat for kids, you can pour the mixture into popsicle molds or ice cube trays with toothpicks to freeze. For grown-ups, spike it up with a splash of tequila if you are in the mood to fiesta.
